Recipe: Shami Kebab
Ingredients
- Mince meat 250 gm ( hand-made)
- Gram lentil 4 tbsp (soak in water)
- Potato 1 (boiled)
- Cumin 1/2 tsp
- Fennel seeds 1 tsp
- Whole coriander 1 tsp
- Green cardamom 2
- Whole red chilli 6
- Salt 1 tsp
- Egg 1
- Garlic cloves 4
- Fresh coriander 2 tbsp
- Mint leaves 2 tbsp
- Green chillies 2
- Ginger 1 tsp (chopped)
- All spice powder 1 tsp
- Oil for frying
Instructions
- Take a pan and add minced meat, soaked gram lentil, fennel seeds, cumin seeds, whole coriander, green gardamom, salt, whole red
- chilli, garlic and ginger cloves and add two glass of water and boil on low heat.
- Remove from stove, when water absorbed and all ingredients become tender and let is cool.
- Now add boiled potato and chop this mixture in a chopper.
- After blending put the mixture in a bowl and add egg, coriander leaves, mint leaves, green chillies and all spice powder, and mix
- gently.
- Make kebab and fry 3-4 kebab at once until it become light brown and turning them once.
- Shami kebab is ready to serve. Garnish with green chillies, coriander leaves, slided lemon and onion.
- Serving: Shami kebab can be served hot with bread (roti), rice or mint dip.
- Tip for Frying Shami Kebab:
- 1- Add the enough oil to cover the surface of fry pan if you will add excessive oil then the kebab will split.
- 2- For absorbing excess oil, put the kebab for a while on absorbent kitchen paper.
- Make kebabs and fry 3-4 kabab at a time to a rich brown color, turning them once.
- Remove from pan and put them on absorbent kitchen paper to absorb excess oil.
